Muy Caliente...Kittehs Salsa


Let me start by saying, my husband begs for homemade salsa on a REGULAR basis. Since he has been a good boy I made him a batch the other day...and tacos...
YOU BET he felt SPECIAL!

He always says,
"oh dearest wife in the land, you make the best salsa."
mmm, not really, but he does say that he loves my salsa.

Salsa making is not rocket science, its super easy.
Wash, Cut, season and stir.

You will need:
8 Roma Tomatoes
1 white onion
1 bushels of Cilantro
1 clove of garlic
2 jalapenos
1 lemon
salt & pepper to taste

Wash and dry ingredients.

Cut the ends off the tomatoes and dice them into tiny squares and place in a large bowl. You can use a food chopper to make your life easier. I use a Pampered Chef chopper.
For the Cilantro, cut then stems off. (I keep a small portion)
 When cutting the Cilantro I twist the stems
together...see photo.
Then chop with my knife and place in the large bowl.

After shelling my onion I take the whole onion and run it under cold water...I'm no dummy. I tear up even smelling onion...someone told me to do this water trick and it helps. Then I diced it up in my Food Chopper and throw in the bowl.

Jalapeno time! Remove the stems and dice those bad boys up and place them in the bowl...
2 Jalapenos makes pretty warm salsa, like sweaty neck hot ...
 if you have a baby mouth...try 1 instead.

Using 1 clove from your garlic bulb...To crack my clove I lay it under my knife and crack it...(see photo)
Now it is ready to peel and dice. 
Since the clove is small I dice this by hand with a knife and place in the bowl with other ingredients.

Squeeze half of the lemon into the mixture and add salt and pepper to taste. More lemon can be added if necessary. Mix well...serve with your favorite tortilla chips or on tacos.

Ground Turkey...not beef...onion, cilantro and lemon...YUM-O!
